  • 2 large sweet potatoes (about 2 lbs / 900g)
  • 1 can (12oz / 340ml) evaporated milk
  • 2 large eggs + 1 egg yolk
  • 3/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/2 tsp kosher salt
  • 1 tsp pure vanilla extract
  • 1 bag (10oz / 280g) large marshmallows
  • 1 or 2 single pie crusts (homemade or store-bought)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes, poke with a fork, and bake for 45-60 minutes until tender. Cool, scoop out flesh, and mash into a smooth puree (approx. 2 cups). Press through a sieve if watery.
  2. Melt butter in a light-colored skillet over medium heat. Stir constantly until it foams, crackles, and turns golden brown with a nutty aroma (5-7 minutes). Immediately pour into a heatproof bowl to stop cooking.
  3. In a food processor, combine sweet potato puree, brown butter, evaporated milk, sugar, eggs, egg yolk, cinnamon, nutmeg, ginger, allspice, salt, and vanilla. Pulse until smooth.
  4. Fit pie crust into a 9-inch pie dish. Pour filling into the crust and smooth the top.
  5. Place pie on a baking sheet and bake at 350°F (175°C) for 45-50 minutes until edges are set and center has a slight jiggle.
  6. Remove pie from oven and let cool for 10 minutes. Arrange marshmallows in a single layer on top.
  7. Broil for 1-2 minutes, watching closely, until marshmallows are golden brown and puffy.
  8. Let pie cool completely on a wire rack (at least 2 hours) before slicing and serving.

Notes

Ensure sweet potato puree is not watery to prevent a soggy pie. Watch marshmallows closely under the broiler as they burn quickly. The pie tastes better the next day as flavors meld. Do not freeze with marshmallows on top.
