Description

  • 1 cup (250g) apple butter
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) neutral oil (canola or vegetable)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 cup (60ml) maple syrup (for drizzle)
  • 12 tbsp heavy cream, milk, or dairy-free alternative (for drizzle)
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/2 cup chopped apples

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch square pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the eggs, oil, apple butter, and half of the maple syrup (if using for batter) until pale and frothy.
  3. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and cinnamon.
  4. Pour the dry ingredients into the wet mixture and fold gently with a spatula until just combined. Do not overmix. Fold in optional nuts or apples if using.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Mix the remaining maple syrup with cream or milk to create a drizzle. Drizzle over the cooled cake before slicing.

Notes

Room temperature eggs help the batter emulsify better. Do not overmix the batter to avoid a tough cake. The cake can be stored at room temperature for up to 3 days or frozen for up to 3 months. For a gluten-free version, use a 1:1 gluten-free flour blend with xanthan gum.
