Ingredients

  • 6 cups cubed seedless watermelon (about 900g)
  • 1012 fresh mint leaves
  • 2 tablespoons fresh lime juice (about 30ml)
  • 12 tablespoons agave syrup, honey, or sugar (adjust to taste)
  • 1 to cups cold water (240-360ml)
  • Ice cubes (optional, for serving)

Instructions

  1. Cut watermelon into cubes and remove any seeds if necessary.
  2. Rinse mint leaves and gently bruise them with your fingers or a wooden spoon to release the oils.
  3. Place watermelon cubes, bruised mint leaves, fresh lime juice, and sweetener into a blender.
  4. Add about 1 cup (240ml) of cold water to start.
  5. Blend on high until completely smooth, about 60 seconds.
  6. Taste and adjust sweetness or water as needed, blending briefly again if adjustments are made.
  7. Optional: Pour the blended mixture through a fine mesh strainer into a pitcher, pressing with a spoon or spatula to remove pulp for a silky smooth texture.
  8. Serve over ice cubes and garnish with a sprig of fresh mint or a thin slice of lime.

Notes

Use ripe, seedless watermelon for best sweetness. Fresh mint is essential for vibrant flavor; bruising the leaves releases oils. Adjust water amount to preferred thickness. Fresh lime juice is recommended over bottled. Straining is optional but creates a smoother texture. Serve cold with plenty of ice. Can be made ahead and stored in the fridge up to 24 hours; stir before serving.
