Vegan Pumpkin Spice Cold Brew: 5-Min Weeknight Win

  • Author: SOFIA
  • Total Time: 5 minutes
  • Yield: 1 serving 1x

Description

A quick, cozy, and dairy-free pumpkin spice cold brew topped with a thick, dreamy coconut cream foam. This recipe comes together in just five minutes, making it the perfect weeknight reset.

Ingredients

Scale
  • 2 cups cold brew coffee (unsweetened)
  • 2 tablespoons pumpkin puree (100% pure, not pie filling)
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 12 tablespoons maple syrup (optional, for base)
  • 1/2 can full-fat canned coconut milk (shaken well)
  • 1/2 teaspoon vanilla extract (for foam)
  • 1 teaspoon maple syrup (for foam)
  • Ice cubes
  • Extra pumpkin pie spice (for garnish, optional)

Instructions

  1. Prepare the Spiced Cold Brew Base: In a blender jar, combine 2 cups cold brew coffee, 2 tablespoons pumpkin puree, 1 teaspoon pumpkin pie spice, 1 teaspoon vanilla extract, and 1 tablespoon maple syrup. Pulse or blend for 10-15 seconds until smooth and uniform. Taste and adjust sweetness or spice if desired.
  2. Make the Coconut Cream Cold Foam: Shake the can of full-fat coconut milk vigorously. Pour 1/2 cup of the coconut milk into a blender jar. Add 1/2 teaspoon vanilla extract and 1 teaspoon maple syrup. Blend on high for 30-45 seconds until the mixture is thick, frothy, and mousse-like.
  3. Assemble the Drink: Fill a large glass with ice cubes. Pour the spiced cold brew base over the ice until the glass is about 3/4 full.
  4. Top with Foam: Spoon or pour the coconut cream foam over the coffee to create a thick white layer. Garnish with a sprinkle of extra pumpkin pie spice if desired.
  5. Serve: Enjoy immediately, either by sipping the foam first or stirring it in for a fully mixed latte experience.

Notes

Ensure you use full-fat canned coconut milk, not carton coconut beverage, for the foam to thicken properly. The spiced coffee base can be stored in the fridge for up to 3 days. The coconut foam is best made fresh but can be stored for a few hours if necessary.
