  • 1/2 cup (120ml) unsweetened plant milk (e.g., oat, soy, almond)
  • 1/3 cup (80ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 34 medium apples (Honeycrisp, Gala, or Fuji), diced
  • 1 tablespoon lemon juice
  • 1 tablespoon flour (for tossing apples)
  • 1/2 cup (40g) old-fashioned oats
  • 1/2 cup (60g) flour (for topping)
  • 1/2 cup (100g) packed brown sugar
  • 1/4 cup (55g) melted coconut oil
  • 1/2 teaspoon cinnamon (for topping)
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch square baking pan or line with parchment paper.
  2. In a large bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon.
  3. In a separate bowl, whisk applesauce, plant milk, vegetable oil, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  5. Dice apples into 1/2-inch cubes. Toss with lemon juice, 1 teaspoon cinnamon, and 1 tablespoon flour.
  6. Spread half of the batter into the prepared pan. Sprinkle half of the apples over the batter. Add remaining batter, then top with remaining apples, pressing them in slightly.
  7. In a small bowl, mix oats, 1/2 cup flour, brown sugar, 1/2 teaspoon cinnamon, and nutmeg. Pour in melted coconut oil and mix with a fork until clumpy.
  8. Sprinkle crumble topping evenly over the cake.
  9. Bake for 40-45 minutes until golden brown and a toothpick inserted in the center comes out clean. Cover with foil if topping browns too quickly.
  10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use room temperature ingredients for better emulsion. Tossing apples in flour prevents them from sinking. Store covered at room temperature for 2 days or refrigerate for up to 5 days. Can be frozen for up to 3 months.
