Description
A moist, plant-based autumn cake featuring tender spiced apples and a crunchy oat streusel topping, made with simple pantry staples.

- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 3/4 cup (150g) granulated sugar
- 1/2 cup (120g) unsweetened applesauce
- 1/2 cup (120ml) unsweetened plant milk (e.g., oat, soy, almond)
- 1/3 cup (80ml) vegetable oil
- 1 teaspoon vanilla extract
- 3–4 medium apples (Honeycrisp, Gala, or Fuji), diced
- 1 tablespoon lemon juice
- 1 tablespoon flour (for tossing apples)
- 1/2 cup (40g) old-fashioned oats
- 1/2 cup (60g) flour (for topping)
- 1/2 cup (100g) packed brown sugar
- 1/4 cup (55g) melted coconut oil
- 1/2 teaspoon cinnamon (for topping)
- 1/4 teaspoon nutmeg
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9 inch square baking pan or line with parchment paper.
- In a large bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon.
- In a separate bowl, whisk applesauce, plant milk, vegetable oil, and vanilla until smooth.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Dice apples into 1/2-inch cubes. Toss with lemon juice, 1 teaspoon cinnamon, and 1 tablespoon flour.
- Spread half of the batter into the prepared pan. Sprinkle half of the apples over the batter. Add remaining batter, then top with remaining apples, pressing them in slightly.
- In a small bowl, mix oats, 1/2 cup flour, brown sugar, 1/2 teaspoon cinnamon, and nutmeg. Pour in melted coconut oil and mix with a fork until clumpy.
- Sprinkle crumble topping evenly over the cake.
- Bake for 40-45 minutes until golden brown and a toothpick inserted in the center comes out clean. Cover with foil if topping browns too quickly.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use room temperature ingredients for better emulsion. Tossing apples in flour prevents them from sinking. Store covered at room temperature for 2 days or refrigerate for up to 5 days. Can be frozen for up to 3 months.
