  • ½ cup / 50g unsweetened cocoa powder (Dutch-processed preferred)
  • ¼ cup / 60ml pure maple syrup
  • 1 teaspoon / 5ml pure vanilla extract
  • ½ teaspoon / 3g fine sea salt
  • 12 tablespoons / 15-30ml almond milk or oat milk (optional, for consistency)
  • ½ cup / 60g whole raw hazelnuts
  • Pinch of sea salt (for topping)
  • Flaky sea salt (optional garnish)
  • Whipped coconut cream (optional garnish)
  • Dark chocolate shavings (optional garnish)

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Ensure the avocados are ripe and sweet.
  2. Heat a dry skillet over medium heat. Toast the hazelnuts in a single layer for 3-5 minutes, shaking frequently, until fragrant and lightly browned. Transfer to a plate to cool.
  3. Once cooled, rub the hazelnuts in a clean kitchen towel to remove most of the skins, then chop them roughly into chunks.
  4. Add the avocado flesh, cocoa powder, maple syrup, vanilla extract, and salt to a food processor or high-speed blender.
  5. Pulse a few times to break up ingredients, then blend on high speed for 1-2 minutes, stopping to scrape down the sides, until the mixture is completely smooth and creamy.
  6. If the mixture is too thick, add almond milk or oat milk one tablespoon at a time until desired consistency is reached.
  7. Transfer the mousse to serving dishes, smoothing the tops with a spoon.
  8. Refrigerate for at least 10 minutes to allow flavors to meld and texture to firm up.
  9. Sprinkle the toasted, chopped hazelnuts and a pinch of flaky sea salt over each serving before serving immediately.

Notes

Ensure avocados are ripe; they should yield slightly to gentle pressure. Toasting hazelnuts enhances flavor significantly. The mousse can be stored in the fridge for up to 3 days; press plastic wrap directly onto the surface to prevent browning. If using a blender instead of a food processor, blend longer and scrape sides more often.
