- 1/4 cup grated zucchini, squeezed dry
- 1 large egg

- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- Generous crack of black pepper
- 2 cups marinara sauce
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh basil, chopped
- 1 tablespoon olive oil
Instructions
- Preheat oven to 400°F (200°C) if baking, or prepare a skillet for frying.
- Grate the zucchini and squeeze it tightly in a clean kitchen towel to remove as much water as possible. Set aside.
- In a large mixing bowl, combine ground turkey, ricotta cheese, squeezed zucchini, egg, Parmesan cheese, breadcrumbs, minced garlic, Italian seasoning, salt, and pepper.
- Mix the ingredients by hand or with a sturdy spoon until just combined. Do not overmix.
- Roll the mixture into 1.5-inch diameter balls and place them on a parchment-lined sheet pan.
- Option A (Baking): Bake for 15-20 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
- Option B (Frying): Heat olive oil in a skillet over medium heat. Fry meatballs in batches for 8-10 minutes, turning frequently until browned on all sides.
- While meatballs cook, heat marinara sauce in a medium saucepan over medium-low heat with minced garlic and red pepper flakes (if using) for about 5 minutes.
- Gently fold the cooked meatballs into the warm marinara sauce and let sit for 2-3 minutes to absorb flavors.
- Stir in fresh basil and serve over pasta, in sub rolls, or with steamed vegetables.
Notes
Squeeze the zucchini dry to prevent soggy meatballs. Do not overmix the meat to keep them tender. Use a meat thermometer to ensure turkey reaches 165°F. Meatballs freeze well for up to 3 months.
