  • 1 cup (150g) fresh strawberries, hulled and finely diced
  • 2 tablespoons (30g) butter, melted
  • 2 tablespoons (25g) granulated sugar
  • 12 tablespoons (10-15g) powdered sugar, for dusting

Instructions

  1. Thaw the frozen croissant dough in the refrigerator overnight or at room temperature for 2-3 hours.
  2. Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper.
  3. In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. Fold in the diced strawberries.
  4. On a lightly floured surface, gently roll out each sheet of dough into a rectangle about 1/4 inch thick.
  5. Spread the cream cheese mixture evenly over the dough, leaving a 1-inch border around the edges.
  6. Roll the dough tightly from one long side into a jelly roll shape. Pinch the seam to seal.
  7. Using a sharp knife, cut each roll into 6 even pieces, resulting in 12 stuffed croissants.
  8. Place croissants on baking sheets, leaving 2 inches between each. Cover loosely and let rise in a warm spot for 20-30 minutes until puffy.
  9. Brush the tops with melted butter and sprinkle with granulated sugar.
  10. Bake for 15-20 minutes, rotating pans halfway through, until golden brown and puffed.
  11. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack. Dust with powdered sugar while warm and serve immediately.

Notes

Ensure cream cheese is full-fat block style, not spreadable. Leave a 1-inch border when spreading filling to prevent leaking. Do not rush the proofing step; croissants should look puffy and jiggle slightly before baking. For extra strawberry flavor, add a teaspoon of strawberry jam to the filling.
