- 8 cups (2 liters) low-sodium chicken or vegetable stock
- 4–5 tablespoons white miso paste
- 2 tablespoons toasted sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons red pepper flakes
- 1 tablespoon sesame seeds
- Pinch of salt
- 2 tablespoons neutral oil (canola or vegetable)
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 2 packs fresh ramen noodles
- 2–3 stalks green onions, thinly sliced
- 2 sheets nori, cut into strips
- 2 large eggs
Instructions
- Make the chili oil: Combine red pepper flakes, sesame seeds, and salt in a heatproof bowl. Heat neutral oil until shimmering and pour over the mixture. Stir and set aside.
- Prepare the broth base: In a medium saucepan, combine stock, garlic, ginger, and sesame oil. Simmer for 5 minutes to infuse flavors.
- Whisk miso paste with a ladle of hot broth in a small bowl until smooth. Stir the miso mixture back into the saucepan. Keep warm but do not boil.
- Cook the eggs: Bring a pot of water to a boil. Gently lower eggs in and cook for exactly 6 minutes and 30 seconds. Immediately transfer to an ice bath for 5 minutes, then peel.
- Cook the noodles: Bring a large pot of water to a rolling boil. Cook fresh noodles for 2-3 minutes or dried noodles for 3-5 minutes until al dente. Drain without rinsing.
- Assemble: Divide hot broth between two large bowls. Stir in soy sauce and rice vinegar. Add noodles, top with green onions, nori, and sliced jammy eggs. Drizzle with chili oil and serve immediately.
Notes
Do not boil the broth after adding miso to preserve probiotics and prevent bitterness. The egg timing is crucial for a jammy yolk; use an ice bath to stop cooking. Fresh noodles are recommended for best texture. Broth can be made ahead and frozen; noodles should always be cooked fresh.
