Ingredients

  • 3.5 ounces (100g) Mexican chocolate disc or chocolate chips
  • 3 cups (720ml) whole milk (or 2% or plant-based milk like almond or oat)
  • 1 cinnamon stick
  • 1/8 teaspoon cayenne pepper (a pinch)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 12 tablespoons sugar (optional)
  • Optional toppings: mini marshmallows, whipped cream, sprinkle of cinnamon

Instructions

  1. Pour the milk into a small saucepan and add the cinnamon stick. Warm over medium heat until just about to simmer, small bubbles forming around edges, but do not boil. Infuse the milk with cinnamon flavor.
  2. Remove the cinnamon stick and discard or save for another use. Lower heat to medium-low and add the Mexican chocolate or chocolate chips. Stir constantly with a whisk or spoon until chocolate is fully melted and mixture is smooth and glossy.
  3. Sprinkle in cayenne pepper, vanilla extract, and salt. Stir well to combine. If using sugar, add now and whisk until dissolved.
  4. Taste and adjust spice or sweetness as desired by adding more cayenne or sugar.
  5. Pour hot chocolate into mugs. Top with mini marshmallows, whipped cream, or a sprinkle of cinnamon if desired. Serve warm and enjoy.

Notes

Do not boil the milk to avoid bitterness. Use real Mexican chocolate for authentic flavor. Adjust cayenne pepper carefully as it is potent. For extra richness, stir in a teaspoon of butter or heavy cream at the end. Can be made vegan by using plant-based milk and vegan chocolate.
