Ingredients

  • 1 cup honey
  • 1 cup water
  • 2 cups fresh blackberries
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh lemon juice (about 46 lemons)
  • 4 cups sparkling water or club soda
  • Ice cubes
  • Optional garnish: basil sprigs, lemon wheels, or whole blackberries

Instructions

  1. In a small saucepan, combine 1 cup honey and 1 cup water. Heat over medium-low heat, stirring constantly, until the honey dissolves completely (about 3-5 minutes). Remove from heat and let cool to room temperature.
  2. Rinse blackberries and pat dry. Place them in a large pitcher along with the basil leaves.
  3. Muddle the blackberries firmly until broken down and juicy. Gently press the basil leaves to bruise them and release oils, avoiding tearing them into small pieces.
  4. Squeeze fresh lemons to obtain 1/2 cup of juice and add it to the pitcher. Stir to combine.
  5. Place a mesh strainer over a bowl or directly over the pitcher. Pour the mixture through the strainer, pressing on solids to extract all juice. Discard seeds and basil bits.
  6. Pour the strained liquid into the large pitcher. Add the cooled honey simple syrup and stir well.
  7. Slowly add the sparkling water to preserve carbonation. Stir gently.
  8. Taste and adjust sweetness or tartness if needed. Serve immediately over ice with optional garnish.

Notes

For best results, use cold ingredients. The syrup and berry mash can be made up to 2 days in advance and stored separately in the fridge. Mix with sparkling water only right before serving to maintain fizz. If using frozen blackberries, thaw and drain excess liquid first. Fresh lemon juice is essential for the best flavor.
