Ingredients
Scale
- 1 cup warm water
- 2 teaspoons active dry yeast
- 2 tablespoons brown sugar
- 2 ½ to 3 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons unsalted butter, melted
- 6 cups water (for boiling)
- ½ cup baking soda
- 1 tablespoon salt (for boiling water)
- ½ cup granulated sugar
- 2 teaspoons ground cinnamon
- 4 tablespoons unsalted butter, melted (for coating)
- 4 oz full-fat cream cheese, softened
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- 2–3 tablespoons powdered sugar
- a pinch of salt (for dip)
Instructions
- In a large bowl, combine warm water and brown sugar. Sprinkle yeast on top and let sit for 5 minutes until foamy. Stir in melted butter and salt.
- Add flour one cup at a time, stirring until the dough is soft and slightly sticky. Knead in the bowl for 2-3 minutes until smooth. Cover and let rest for 10 minutes.
- Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
- Bring a large pot of water to a boil. Reduce heat to medium and whisk in baking soda and salt. Keep at a gentle simmer.
- Roll dough into a 12-inch snake and cut into 1-inch pieces. Roll each piece into a ball.
- Working in batches, drop bites into the simmering water. Boil for 30 seconds on each side until they float. Remove with a slotted spoon and place on baking sheets.
- Bake for 10-12 minutes until golden brown.
- While hot, brush each pretzel generously with melted butter and immediately roll in the cinnamon sugar mixture.
- For the dip: Beat softened cream cheese until smooth. Add heavy cream, vanilla extract, powdered sugar, and a pinch of salt. Whip until stiff peaks form.
Notes
Do not over-knead the dough to keep the bites soft. The boiling step is essential for the authentic pretzel texture and flavor. Brush with butter while the pretzels are still hot to ensure the sugar coating sticks. Store leftovers in an airtight container at room temperature for up to 2 days.
