Description

A quick and easy cookie recipe featuring nutty brown butter and crunchy toffee bits, perfect for busy weeknights. These cookies are soft, chewy, and irresistibly delicious.

Ingredients

Scale
  • 1 cup (2 sticks, 225g) unsalted butter
  • 3/4 cup (150g) light brown sugar
  • 1/3 cup (67g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (160g) toffee bits

Instructions

  1. Brown the butter: Melt unsalted butter over medium heat in a saucepan, stirring constantly until it foams and turns golden brown with a nutty aroma. Remove from heat and cool for 5 minutes.
  2. Mix sugars and wet ingredients: In a large bowl, whisk together light brown sugar, granulated sugar, and cooled brown butter until smooth. Add egg and vanilla extract, whisking until combined and glossy.
  3. Combine dry ingredients: In a separate bowl, whisk together all-purpose flour, baking soda, and salt.
  4. Form the dough: Gradually add dry ingredients to wet mixture, stirring gently with a wooden spoon until just combined. Fold in toffee bits evenly.
  5. Scoop and bake: Preheat oven to 350°F (175°C). Drop dough balls using a cookie scoop or tablespoon onto a lined baking sheet, spacing 2 inches apart. Bake for 10-12 minutes until edges are set but centers remain soft.
  6. Cool and enjoy: Let cookies cool on baking sheet for 5 minutes, then transfer to a cooling rack to finish cooling.

Notes

Do not rush browning the butter to avoid burning. Cool the butter before adding the egg to prevent scrambling. Use a cookie scoop for uniform cookies. Slightly underbake for soft centers. Store in an airtight container with a slice of bread to maintain softness. Toffee bits can be substituted with chopped caramel candies or chocolate chips.
