Ingredients
- 2 pounds pork tenderloin (preferably two smaller loins)
- Kosher salt

- 1/2 cup honey
- 1/4 cup low-sodium soy sauce
- 6 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon rice vinegar
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)
- 2 green onions, sliced (for garnish)
- 1 teaspoon toasted sesame seeds (for garnish)
- Steamed rice or noodles (for serving)
Instructions
- Pat pork tenderloins dry and season generously with salt and black pepper. Place them in the slow cooker, ensuring they are not stacked.
- In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, and red pepper flakes until smooth.
- Pour the glaze over the pork in the slow cooker, scraping the bowl to get all the sauce.
- Cover and cook on LOW for 4-5 hours until the internal temperature reaches 145°F. Do not cook on HIGH.
- Remove the pork to a cutting board and cover loosely with foil to keep warm.
- Turn the slow cooker to HIGH. Whisk the cornstarch and water slurry, then pour it into the sauce in the slow cooker.
- Cook on HIGH for 5-10 minutes, stirring occasionally, until the sauce thickens and becomes glossy.
- Slice the pork into 1/2-inch rounds against the grain.
- Arrange pork on a platter, spoon the thickened glaze over the top, and garnish with green onions and sesame seeds.
- Serve immediately with steamed rice or noodles.
Notes
Do not cook on HIGH as pork tenderloin is lean and will dry out. Ensure you use real honey for the best flavor. Slice the pork against the grain for maximum tenderness. The sauce will be thin initially but thickens with the cornstarch slurry at the end. Leftovers can be stored in the fridge for up to 3 days.
