  • 1.5 pounds chicken breasts or thighs, boneless and skinless, cut into bite-sized pieces
  • 2 medium yellow onions, sliced thin
  • 2 tablespoons butter
  • 1 packet (1.75 oz) gravy mix (beef or mushroom)
  • 1.5 cups cold water
  • Salt and black pepper to taste
  • Optional: 1 cup frozen peas, 1 cup diced carrots, or 1 teaspoon dried thyme

Instructions

  1. Season chicken pieces generously with salt and pepper. Slice onions into thin half-moons.
  2. Heat butter in a large skillet over medium-high heat. Add chicken in a single layer (cook in batches if necessary) and sear for 4-5 minutes per side until golden brown and cooked through. Remove chicken to a plate and set aside.
  3. Reduce heat to medium. Add sliced onions to the same skillet with the chicken drippings. Cook for 5-7 minutes, stirring occasionally, until soft and caramelized.
  4. In a separate bowl, whisk the gravy mix with cold water until smooth. Pour into the skillet with the onions, scraping up any brown bits from the bottom.
  5. Bring to a simmer and stir constantly for 3-4 minutes until the gravy thickens.
  6. Return the cooked chicken to the skillet, stirring to coat in the gravy. Simmer for 2-3 minutes to meld flavors.
  7. Taste and adjust salt if needed. Serve immediately over mashed potatoes or your preferred side dish.

Notes

Use cold water for the gravy mix to prevent lumps. Reserve the pan drippings (fond) for extra flavor in the gravy. If the gravy is too thick, add a splash of water or broth. If too thin, simmer longer. Chicken should reach an internal temperature of 165°F (74°C).
