Ingredients

  • 2.5 pounds boneless, skinless chicken thighs
  • 1.5 pounds Yukon Gold potatoes, cut into 1-inch chunks
  • 1 medium red onion, sliced into wedges
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh lemon juice (from 23 lemons)
  • 6 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to create the marinade.
  3. Add chicken thighs to the bowl and toss to coat evenly. Let sit for 5 minutes.
  4. Add potato chunks and onion wedges to the same bowl and toss to coat in the remaining marinade.
  5. Line a large sheet pan with parchment paper (optional). Spread potatoes and onions in a single layer. Arrange chicken thighs on top.
  6. Roast in the center rack for 15 minutes.
  7. Flip the chicken and toss the potatoes. If using feta, sprinkle it over the chicken and potatoes now.
  8. Continue roasting for another 10-15 minutes, or until chicken reaches an internal temperature of 165°F and potatoes are fork-tender.
  9. Remove from oven and sprinkle with fresh parsley.
  10. Let rest for 5 minutes before serving.

Notes

Do not crowd the pan to ensure roasting instead of steaming. Cut potatoes into uniform 1-inch chunks for even cooking. Use fresh lemon juice for best flavor. If using chicken breasts, reduce cooking time by 5-7 minutes. Feta should be added in the last 10 minutes to prevent burning.
