Description
A comforting, sweet and savory flatbread topped with roasted fresh figs, salty prosciutto, creamy goat cheese, and a drizzle of hot honey. Perfect for a quick, stress-free meal when you need a moment of self-care.
Ingredients
- 1 large round or 2 small personal pizzas of store-bought soft flatbread or naan
- 4 oz fresh goat cheese (chèvre), crumbled
- 4–6 large fresh figs, sliced
- 4–6 thin slices prosciutto
- 2–3 tablespoons hot honey (or regular honey with red pepper flakes)
- 1 cup fresh arugula
- 1 teaspoon extra virgin olive oil
- Freshly cracked black pepper
- 1 teaspoon balsamic glaze (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pat dry the figs, then slice them in half lengthwise (or quarters if large). Crumble the goat cheese and slice prosciutto if needed.
- Line a baking sheet with parchment paper. Place the flatbread on the sheet and drizzle lightly with olive oil.
- Spread the crumbled goat cheese evenly over the flatbread.
- Arrange the fig slices on top of the cheese, overlapping slightly. Drizzle a tiny bit of olive oil over the figs.
- Bake for 10-12 minutes until the flatbread edges are golden and the cheese is melted and bubbly.
- Remove from the oven and lay the prosciutto slices over the top. Return to the oven for the last 2 minutes to crisp the prosciutto slightly.
- Remove from the oven and let rest for 1 minute.
- Warm the honey in the microwave for 10 seconds, then drizzle generously over the hot flatbread.
- Toss the fresh arugula with a pinch of salt and black pepper, then scatter over the flatbread.
- Slice into quarters and serve immediately.
Notes
For best results, use high-quality prosciutto and fresh figs. Warm the honey before drizzling to ensure it flows smoothly. Add arugula after baking to maintain its crunch. If using dried figs, rehydrate them in warm water for 20 minutes first. This recipe is best eaten fresh; leftovers may become soggy.
