Description
A single-serving, microwave-friendly dessert that combines classic Rice Krispie Treats with warm pumpkin spice flavors. This recipe eliminates waste by creating a perfectly portioned, gooey treat in just 5 minutes.

- 1 cup (100g) standard white marshmallows
- 2 tablespoons (30g) butter
- 2 cups (60g) Rice Krispies cereal
- 2 tablespoons (30g) 100% pure pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1 pinch salt
- Optional: 1 tablespoon white chocolate chips
- Optional: 1 tablespoon chopped pecans
- Optional: 1 teaspoon mini pumpkin seeds
Instructions
- Brush the inside of a 12-ounce microwave-safe mug with butter or spray with non-stick cooking spray to prevent sticking.
- Add butter and marshmallows to the mug. Microwave on high for 30 seconds, then stir well.
- Microwave for another 15-30 seconds and stir again until the mixture is smooth, glossy, and mostly melted. Avoid over-microwaving to prevent hardening.
- Remove from microwave and stir in pumpkin puree, pumpkin pie spice, vanilla extract, and salt until fully incorporated and uniform in color.
- Add Rice Krispies cereal to the mug. Press and fold the cereal into the marshmallow mixture until every piece is evenly coated.
- Let the mug sit for 2-3 minutes to cool slightly and allow the marshmallow to set while remaining gooey.
- Serve warm directly from the mug, optionally topped with extra spices or mini marshmallows.
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling. Do not over-microwave marshmallows or they will become hard. If the mixture is too runny, add more cereal; if too hard, microwave for 10 seconds to soften. Best eaten immediately but can be stored in an airtight container for up to 2 days and reheated.
