Description

A single-serving, microwave-friendly dessert that combines classic Rice Krispie Treats with warm pumpkin spice flavors. This recipe eliminates waste by creating a perfectly portioned, gooey treat in just 5 minutes.


Ingredients

  • 1 cup (100g) standard white marshmallows
  • 2 tablespoons (30g) butter
  • 2 cups (60g) Rice Krispies cereal
  • 2 tablespoons (30g) 100% pure pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • Optional: 1 tablespoon white chocolate chips
  • Optional: 1 tablespoon chopped pecans
  • Optional: 1 teaspoon mini pumpkin seeds

Instructions

  1. Brush the inside of a 12-ounce microwave-safe mug with butter or spray with non-stick cooking spray to prevent sticking.
  2. Add butter and marshmallows to the mug. Microwave on high for 30 seconds, then stir well.
  3. Microwave for another 15-30 seconds and stir again until the mixture is smooth, glossy, and mostly melted. Avoid over-microwaving to prevent hardening.
  4. Remove from microwave and stir in pumpkin puree, pumpkin pie spice, vanilla extract, and salt until fully incorporated and uniform in color.
  5. Add Rice Krispies cereal to the mug. Press and fold the cereal into the marshmallow mixture until every piece is evenly coated.
  6. Let the mug sit for 2-3 minutes to cool slightly and allow the marshmallow to set while remaining gooey.
  7. Serve warm directly from the mug, optionally topped with extra spices or mini marshmallows.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. Do not over-microwave marshmallows or they will become hard. If the mixture is too runny, add more cereal; if too hard, microwave for 10 seconds to soften. Best eaten immediately but can be stored in an airtight container for up to 2 days and reheated.
