  • 1 cup (240ml) Milk (dairy or non-dairy)
  • 2 tablespoons (30ml) Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Nutmeg
  • 1/8 teaspoon Cardamom (optional)
  • 1/4 teaspoon Salt
  • 1/4 cup (30g) Pecans, chopped
  • Extra Maple Syrup for drizzling

Instructions

  1. Toast the pecans: Heat a small skillet over medium heat. Add chopped pecans and dry toast for 3-5 minutes until fragrant and darker. Pour onto a plate to cool completely.
  2. Bloom the spices (optional): Warm the milk until just warm to the touch. Whisk in cinnamon, ginger, nutmeg, and cardamom. Let sit for 5 minutes to release essential oils.
  3. Mix wet ingredients: In a mason jar, combine the warm spiced milk, maple syrup, vanilla extract, and pumpkin puree. Whisk vigorously until smooth.
  4. Add dry ingredients: Add rolled oats and chia seeds to the jar. Sprinkle salt over the top. Stir well to ensure chia seeds don’t clump and oats are submerged.
  5. Chill: Seal the jar and refrigerate for at least 4 hours, ideally overnight (8-12 hours).
  6. Serve: Stir the oats in the morning. Add a splash of milk if too thick. Top with toasted pecans and a drizzle of maple syrup. Eat cold or microwave for 60-90 seconds.

Notes

Use old-fashioned rolled oats, not steel-cut or instant. Toasting the pecans is crucial for texture and flavor. The oats will thicken over time; add more milk when serving if desired. Do not freeze, as the texture becomes weird upon thawing.
