  • 810 ounces beef (ribeye or sirloin), sliced thin against the grain
  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup shredded cheese (provolone or mix with sharp cheddar)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon freshly cracked black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash peppers, cut off tops, and remove seeds/membranes using a spoon. Brush inside and outside with oil.
  3. Place peppers upright in a baking dish and roast for 15 minutes until tender but not mushy.
  4. While peppers roast, heat a skillet over medium-high heat with oil. Sauté diced onion for 2-3 minutes until translucent.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Add sliced beef to the skillet, sear for 1 minute without stirring, then toss and cook for 2-3 minutes until browned.
  7. Stir in Worcestershire sauce and black pepper. Remove from heat.
  8. Remove peppers from oven. Divide beef mixture evenly between peppers.
  9. Top each pepper with shredded cheese.
  10. Return to oven for 3-5 minutes until cheese is bubbly and melted.
  11. Let cool for 2 minutes before serving immediately.

Notes

Slice beef against the grain for tenderness. Use a spoon to remove pepper seeds to avoid tearing. Let cheese sit at room temperature for 5 minutes before grating for better melting. Do not overstuff peppers. Best eaten fresh; reheating may affect texture.
