A quick and refreshing Peach Bellini made with fresh peach puree and sparkling wine, perfect for busy weeknights when you want a little luxury without the fuss.


Ingredients

  • 3 large ripe peaches (about 1 ½ pounds / 700g)
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 750ml bottle sparkling wine (Prosecco or any dry sparkling wine)
  • Ice cubes (optional)
  • Fresh mint or peach slices for garnish (optional)

Instructions

  1. Peel the peaches by scoring an ‘X’ at the bottom, blanching in boiling water for 30 seconds, then transferring to ice water to slip off skins. Alternatively, peel with a vegetable peeler or leave skins on for texture.
  2. Cut peeled peaches into chunks, remove pits, and place in a blender with 2 tablespoons sugar and 1 tablespoon lemon juice. Blend until smooth but slightly pulpy. Adjust sugar or lemon juice to taste.
  3. Chill sparkling wine in the fridge for at least a couple of hours. Optionally, chill glasses in the freezer for a few minutes.
  4. Pour 2 to 3 tablespoons of peach puree into each glass. Tilt the glass and slowly pour sparkling wine over the puree to maintain layers and reduce foam.
  5. Add ice cubes if desired, noting it will dilute flavor slightly.
  6. Garnish with a fresh peach slice or sprig of mint and serve immediately to enjoy the fresh fizz.

Notes

Use ripe peaches for best flavor; frozen peaches can be used if thawed and drained. Adjust sugar based on peach sweetness. Pour sparkling wine slowly to avoid foam. Chill wine and glasses for best experience. Puree can be made up to 2 days ahead and stored in the fridge. Avoid storing mixed Bellini as it loses fizz quickly.
