- 6–8 raw bratwurst links (about 1.5 lbs)
- 1 bottle (12 oz) German-style lager, pilsner, or Märzen
- 2 large yellow onions, sliced thin
- 4 cloves garlic, minced
- 2 tablespoons Dijon mustard
- 1 tablespoon brown sugar
- 2 bay leaves
- 2 tablespoons butter
- 6–8 brioche or pretzel buns
- Spicy brown mustard or whole grain mustard for serving
- Pickled jalapeños or relish for serving
Instructions
- Slice onions into thin half-rings and mince garlic. Measure out beer, mustard, and brown sugar.
- Heat butter in a large skillet or Dutch oven over medium heat. Add sliced onions and cook for 5-7 minutes until soft and translucent.
- Add minced garlic in the last minute of cooking and stir constantly to prevent burning.
- Pour in the beer, scraping up browned bits from the bottom of the pan. Add Dijon mustard, brown sugar, and bay leaves. Stir to dissolve sugar and mustard.
- Bring the mixture to a gentle simmer.
- Nestle the raw bratwurst into the onion-beer mixture. Cover the pan, reduce heat to medium-low, and simmer gently for 15-20 minutes, turning brats halfway through, until internal temperature reaches 160°F (71°C).
- Remove brats from the pan and set aside. Increase heat to medium-high and reduce the sauce for 2-3 minutes until it thickens slightly.
- Sear the brats on a grill, broiler, or grill pan for 1-2 minutes per side until char marks appear and the casing is crispy.
- Toast the buns lightly. Place a brat in each bun and spoon the caramelized onions and reduced beer sauce generously over the top.
- Serve immediately with spicy mustard and pickled jalapeños or relish on the side.
Notes
Use fresh, raw bratwurst for best texture. Avoid IPAs or stouts as they make the dish bitter. If the sauce is too thin, simmer longer; if too thick, add a splash of beer or water. For leftovers, reheat gently in a skillet with a splash of liquid to prevent drying out. This recipe does not freeze well due to texture changes in the casing.
