A quick, healthy, and tangy snack made with oats, protein powder, and lemon. These no-bake bites are perfect for meal prep and provide a sustained energy boost without the sugar crash.

- 1 cup old-fashioned rolled oats
- 1/2 cup vanilla or unflavored protein powder
- 1/2 cup shredded coconut (unsweetened)
- 1/4 cup almond butter
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2–3 tablespoons maple syrup
- 1 tablespoon chia seeds
- 1 pinch salt
Instructions
- Measure out all ingredients. Grate the lemon zest and squeeze the lemon juice.
- In a medium mixing bowl, combine the oats, protein powder, shredded coconut, chia seeds, and salt. Stir until evenly distributed.
- Add the almond butter, lemon juice, lemon zest, and 2 tablespoons of maple syrup to the dry ingredients.
- Mix thoroughly until the mixture becomes sticky and dough-like. If too dry, add more almond butter or lemon juice; if too wet, add more oats.
- Pinch off about 1 tablespoon of mixture at a time and roll into balls between your palms. Place on a baking sheet or plate lined with parchment paper.
- Refrigerate the bites for at least 30 minutes to firm up (or freeze for 15 minutes).
- Store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.
Notes
Do not use instant oats as they turn to mush. Use old-fashioned rolled oats for the best texture. If your almond butter is stiff, microwave it for 10 seconds to soften. Wet your hands slightly if the mixture sticks while rolling. You can substitute almond butter with sunflower seed butter for a nut-free version.
