Description
A quick, one-pan Mediterranean shrimp skillet with feta, lemon, and garlic that tastes like restaurant quality but is ready in 15 minutes. Perfect for busy weeknights.
Ingredients
- 1.5 pounds frozen peeled and deveined shrimp (thawed and dried)
- 6–8 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/2 cup low-sodium chicken broth (or vegetable broth)
- 2 tablespoons fresh lemon juice
- 1/2 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/4 cup sliced Kalamata olives (optional)
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Thaw frozen shrimp in cold water for 10 minutes, then pat them completely dry with paper towels. Season lightly with salt and pepper.
- Heat olive oil in a 12-inch skillet over medium heat. Add minced garlic and red pepper flakes, stirring constantly for 30-60 seconds until fragrant but not browned.
- Add cherry tomatoes (and olives if using) to the pan. Sauté for 2 minutes until tomatoes soften and release juices.
- Increase heat to medium-high. Add shrimp in a single layer. Cook for 2 minutes per side until pink and opaque. Remove shrimp from pan and set aside.
- Reduce heat to medium. Pour in chicken broth and lemon juice, scraping up browned bits from the bottom. Simmer for 1-2 minutes to reduce slightly. Stir in oregano.
- Return shrimp to the pan along with spinach. Toss until spinach wilts. Remove pan from heat.
- Sprinkle crumbled feta cheese over the top. Gently toss to combine, allowing residual heat to soften the cheese slightly.
- Serve immediately with a squeeze of fresh lemon juice and crusty bread or over rice/quinoa.
