  • 68 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup low-sodium chicken broth (or vegetable broth)
  • 2 tablespoons fresh lemon juice
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/4 cup sliced Kalamata olives (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Thaw frozen shrimp in cold water for 10 minutes, then pat them completely dry with paper towels. Season lightly with salt and pepper.
  2. Heat olive oil in a 12-inch skillet over medium heat. Add minced garlic and red pepper flakes, stirring constantly for 30-60 seconds until fragrant but not browned.
  3. Add cherry tomatoes (and olives if using) to the pan. Sauté for 2 minutes until tomatoes soften and release juices.
  4. Increase heat to medium-high. Add shrimp in a single layer. Cook for 2 minutes per side until pink and opaque. Remove shrimp from pan and set aside.
  5. Reduce heat to medium. Pour in chicken broth and lemon juice, scraping up browned bits from the bottom. Simmer for 1-2 minutes to reduce slightly. Stir in oregano.
  6. Return shrimp to the pan along with spinach. Toss until spinach wilts. Remove pan from heat.
  7. Sprinkle crumbled feta cheese over the top. Gently toss to combine, allowing residual heat to soften the cheese slightly.
  8. Serve immediately with a squeeze of fresh lemon juice and crusty bread or over rice/quinoa.
