  • 2 lemons, juiced (about ¼ cup)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 lemon, zested
  • 2 tablespoons fresh dill, chopped
  • 1 small clove garlic, grated
  • Hot sauce or red pepper flakes (optional)
  • Lemon wedges for serving
  • Fresh parsley for garnish
  • Crusty bread or rice for serving

Instructions

  1. Thaw frozen shrimp in cold water if necessary, then pat completely dry with paper towels.
  2. In a medium bowl, combine shrimp, olive oil, lemon juice, minced garlic, dried oregano, 1 teaspoon salt, and ½ teaspoon black pepper. Toss to coat and let marinate for 10-15 minutes.
  3. In a small bowl, whisk together sour cream (or Greek yogurt), mayonnaise, lemon zest, chopped dill, grated garlic, salt, and pepper. Adjust seasoning to taste and set aside.
  4. Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
  5. Place shrimp on the grill in a single layer. Cook for 2-3 minutes on the first side until pink and opaque.
  6. Flip shrimp and cook for another 1-2 minutes until curled into a ‘C’ shape and slightly charred. Remove immediately.
  7. Arrange shrimp on a platter, drizzle generously with the lemon herb sauce, and garnish with fresh parsley and lemon wedges. Serve with crusty bread or rice.

Notes

Do not overcook the shrimp; they turn rubbery quickly. Pat shrimp dry before marinating for better searing. Zest lemons before juicing. The sauce can be made ahead and stored in the fridge for up to 2 days. Do not freeze cooked shrimp.
