Description

A foolproof, slow-cooker BBQ pulled chicken slider recipe that requires zero grill skills. Tender, saucy chicken piled on sweet Hawaiian rolls, brushed with butter, and baked until golden.

  • 2 to 2.5 pounds boneless, skinless chicken breasts
  • 1.5 to 2 cups barbecue sauce (e.g., Sweet Baby Ray’s or KC Masterpiece)
  • 1 medium yellow onion, sliced
  • 1 package (12-16 rolls) Hawaiian rolls
  • 2 tablespoons butter, melted
  • Optional: Dill pickle slices or coleslaw for topping

Instructions

  1. Place chicken breasts in the bottom of a 4-quart slow cooker. Slice the onion and scatter it over the chicken.
  2. Pour the barbecue sauce over the chicken and onion, ensuring the chicken is well-coated.
  3. Cover and cook on LOW for 4-6 hours (or HIGH for about 3 hours) until the chicken is opaque and shreds easily with a fork.
  4. Remove the chicken from the slow cooker and place it in a large bowl. Discard the onion slices or chop them and add back in.
  5. Shred the chicken using two forks until it is in fine shreds.
  6. Return the shredded chicken to the slow cooker and stir it back into the remaining sauce. Let it sit on the ‘warm’ setting for 10 minutes.
  7. Slice the Hawaiian rolls in half horizontally. Place the bottom halves on a baking sheet lined with parchment paper.
  8. Divide the saucy chicken evenly over the bottom halves of the rolls.
  9. Brush the tops of the top halves of the rolls with melted butter.
  10. Place the top halves back on the chicken. Wrap the entire baking sheet tightly in aluminum foil.
  11. Bake at 350°F (175°C) for 10-15 minutes until the tops are golden brown.
  12. Remove from the oven and let cool for 2 minutes before cutting between the rolls to separate the sliders. Serve immediately.
