Description
A foolproof, slow-cooker BBQ pulled chicken slider recipe that requires zero grill skills. Tender, saucy chicken piled on sweet Hawaiian rolls, brushed with butter, and baked until golden.
Ingredients
- 2 to 2.5 pounds boneless, skinless chicken breasts
- 1.5 to 2 cups barbecue sauce (e.g., Sweet Baby Ray’s or KC Masterpiece)
- 1 medium yellow onion, sliced
- 1 package (12-16 rolls) Hawaiian rolls
- 2 tablespoons butter, melted
- Optional: Dill pickle slices or coleslaw for topping
Instructions
- Place chicken breasts in the bottom of a 4-quart slow cooker. Slice the onion and scatter it over the chicken.
- Pour the barbecue sauce over the chicken and onion, ensuring the chicken is well-coated.
- Cover and cook on LOW for 4-6 hours (or HIGH for about 3 hours) until the chicken is opaque and shreds easily with a fork.
- Remove the chicken from the slow cooker and place it in a large bowl. Discard the onion slices or chop them and add back in.
- Shred the chicken using two forks until it is in fine shreds.
- Return the shredded chicken to the slow cooker and stir it back into the remaining sauce. Let it sit on the ‘warm’ setting for 10 minutes.
- Slice the Hawaiian rolls in half horizontally. Place the bottom halves on a baking sheet lined with parchment paper.
- Divide the saucy chicken evenly over the bottom halves of the rolls.
- Brush the tops of the top halves of the rolls with melted butter.
- Place the top halves back on the chicken. Wrap the entire baking sheet tightly in aluminum foil.
- Bake at 350°F (175°C) for 10-15 minutes until the tops are golden brown.
- Remove from the oven and let cool for 2 minutes before cutting between the rolls to separate the sliders. Serve immediately.
