- 1 tablespoon kosher salt
- 1 teaspoon coarsely ground black pepper
- 8–10 burger buns (potato rolls or brioche)
- 2 tablespoons butter (for toasting buns)
- 8 slices sharp cheddar cheese (or mix with pepper jack)
- 1 cup BBQ sauce (Kansas City-style, thick and smoky)
- 1 teaspoon smoked paprika
- 1 teaspoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1/2 teaspoon garlic powder
- Optional: Red onion, thinly sliced
- Optional: Pickle chips
Instructions
- Divide ground chuck into 8 equal portions (4-5 ounces each). Gently form into patties, making a slight indent in the center of each to prevent puffing.
- Season both sides of the patties generously with kosher salt and black pepper right before cooking.
- Heat the Blackstone griddle on medium-high for about 10 minutes until water droplets sizzle and dance on the surface.
- Place patties on the hot griddle. Do not press down. Cook undisturbed for 4-5 minutes until juices pool on top and edges brown.
- Flip patties and immediately add cheese slices to melt.
- Push cooked burgers to the back of the griddle. In the empty space, combine BBQ sauce, smoked paprika, Worcestershire sauce, brown sugar, and garlic powder. Stir and cook for 2 minutes until bubbly and thickened.
- Butter the cut sides of the buns and toast them butter-side down on the griddle for 30-60 seconds until golden brown.
- Assemble burgers by slathering the bun with the smoky BBQ sauce, adding the burger (cheese side up), and topping with caramelized onions or pickles if desired.
- Serve immediately.
Notes
Do not overcrowd the griddle to ensure proper searing. Keep the sauce moving to prevent burning due to sugar content. Let burgers rest for 1-2 minutes after cooking to redistribute juices. Use cold meat for easier handling. For gluten-free options, use gluten-free buns.
