  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup honey
  • 3 tablespoons soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons garlic paste or minced garlic
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper and grease lightly.
  2. In a small bowl, whisk together honey, soy sauce, ketchup, garlic, apple cider vinegar, and Worcestershire sauce to make the glaze. Set aside half for later.
  3. In a large bowl, combine ground beef, eggs, breadcrumbs, milk, onion, garlic, parsley, salt, and pepper. Mix gently with hands until just combined; do not overmix.
  4. Transfer meat mixture to the prepared loaf pan, pressing down evenly. Brush half of the glaze over the top.
  5. Bake for 40 minutes. If browning too quickly, tent with foil. Check internal temperature; it should reach 160°F (71°C).
  6. Remove from oven, brush remaining glaze over the top, and return to oven for 5 minutes to caramelize.
  7. Let meatloaf rest for at least 10 minutes before slicing to allow juices to redistribute.

Notes

Do not overmix the meat to avoid a tough texture. Use 80/20 ground beef for juiciness. Resting the meatloaf for 10 minutes is crucial to retain moisture. For a gluten-free version, use gluten-free breadcrumbs and soy sauce or coconut aminos.
