Ingredients
Scale
- 4 bone-in or boneless pork chops (about 1-inch thick, 1.5 lbs)
- Salt and black pepper (to taste)
- 2 tablespoons vegetable oil or avocado oil
- 6–8 cloves garlic, minced (about 2–3 tablespoons)
- 3 tablespoons unsalted butter
- ½ cup honey
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar or apple cider vinegar
- ½ teaspoon garlic powder
- ½ teaspoon red pepper flakes (optional)
- ¼ cup water or chicken broth
- Optional garnish: chopped green onions, sesame seeds, or fresh parsley
Instructions
- Pat pork chops dry with paper towels and season generously with salt and black pepper. Let them sit at room temperature for 10 minutes.
- In a small bowl, whisk together honey, soy sauce, minced garlic, vinegar, garlic powder, red pepper flakes, and water or chicken broth until smooth. Set aside.
- Heat oil in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown and internal temperature reaches 145°F. Remove to a plate and tent with foil.
- Reduce heat to medium. Pour the sauce mixture into the skillet and simmer for 2-3 minutes, stirring to scrape up browned bits from the bottom.
- Reduce heat to low. Whisk in butter one tablespoon at a time until the sauce is emulsified and glossy.
- Return pork chops to the skillet, tossing to coat in the sauce. Let sit for 1 minute to absorb flavor. Serve immediately with garnish.
Notes
Patting the chops dry is crucial for a good sear. Do not overcrowd the pan; cook in batches if necessary. Let the chops rest after searing to redistribute juices. Add butter at the end over low heat to prevent the sauce from breaking. Pork is safe to eat at 145°F with a 3-minute rest.
