A simple, forgiving recipe for homemade strawberry pop-tarts featuring a flaky no-knead pastry dough, real fruit filling, and a thick vanilla bean glaze. Perfect for weekend brunch or freezing for busy mornings.

- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- 1 teaspoon salt
- 2 tablespoons sugar
- 6–8 tablespoons ice water
- 1 cup strawberry jam or preserves
- 1 teaspoon lemon juice
- 1 ½ cups confectioners’ sugar, sifted
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk
- Pinch of salt
- 1 egg beaten with 1 tablespoon water (for egg wash, optional)
Instructions
- In a large bowl, whisk together the flour, salt, and sugar.
- Add the cold, cubed butter and use a fork or pastry cutter to cut it into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces.
- Add ice water one tablespoon at a time, mixing gently until the dough just starts to come together.
- Divide the dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Roll out one disc of dough into a rectangle about 1/8 inch thick and cut into 8-10 squares.
- Spoon about 1 tablespoon of strawberry jam mixed with lemon juice onto the center of each square.
- Brush the edges with water or egg wash, place another square of dough on top, and press edges firmly with a fork to seal.
- Poke a small hole in the center of each tart to let steam escape.
- Bake for 20-25 minutes until the crust is golden brown, rotating pans halfway through.
- While baking, whisk together confectioners’ sugar, vanilla extract, and milk to make the glaze.
- Let tarts cool for 10 minutes, then drizzle with glaze and let set for 5 minutes before serving.
Notes
Keep all ingredients cold for a flaky crust. Do not overfill the tarts to prevent leaking. The dough can be frozen unbaked for up to 3 months. Store leftovers in an airtight container at room temperature for up to 3 days.
