A cozy, budget-friendly homemade pumpkin spice latte made with real pumpkin puree and a simple, pan-friendly syrup. Ready in just 10 minutes, this drink offers the authentic taste of fall without the artificial additives found in coffee shop versions.

- 1 cup (240g) pure pumpkin puree
- ½ cup (100g) brown sugar
- ½ cup (120ml) water
- 2 tablespoons (30g) unsalted butter
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 shots (60ml) espresso or strong coffee
- 1 cup (240ml) milk (whole, oat, almond, or soy)
- Whipped cream (optional)
- Pumpkin pie spice for garnish
Instructions
- In a small saucepan over medium heat, combine pumpkin puree, brown sugar, water, and butter.
- Whisk constantly to break up lumps in the pumpkin puree until the butter melts and sugar dissolves.
- Add pumpkin pie spice, vanilla extract, and salt. Whisk for 2-3 minutes until the mixture is smooth, glossy, and slightly thickened.
- Remove from heat and let cool slightly. The syrup will thicken further as it cools.
- While the syrup cools, brew espresso or strong coffee.
- Heat milk until steaming (about 150°F/65°C) but not boiling.
- Froth the milk using a handheld frother, steam wand, or by whisking vigorously until velvety microfoam forms.
- Add 2-3 tablespoons of pumpkin spice syrup to a mug.
- Pour in the hot espresso and stir to combine.
- Pour the frothed milk over the coffee, holding back foam with a spoon, then spoon the foam on top.
- Top with whipped cream and a dusting of pumpkin pie spice if desired. Serve immediately.
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling. If the syrup is too thick, add a splash of water. For a vegan version, use plant-based milk and coconut oil instead of butter. The syrup can be stored in the fridge for up to 3 weeks or frozen for 2 months.
