A sophisticated homemade fig jam made with aged balsamic vinegar and fresh thyme. This recipe offers a complex sweet-and-sour flavor profile with a perfect spreadable consistency using a simple cold spoon test.

- 2 pounds (900g) fresh mission figs or dried figs
- 1 cup (200g) granulated sugar
- 2 tablespoons (30ml) aged balsamic vinegar
- 1 tablespoon (15ml) fresh lemon juice
- 4–5 sprigs fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract (optional)
- 1/4 teaspoon nutmeg (optional)
Instructions
- Wash and pat dry fresh figs, remove stems, and chop into rough chunks. If using dried figs, chop finely and soak in hot water for 10 minutes, then drain.
- In a heavy-bottomed pot, combine chopped figs, sugar, lemon juice, and salt. Stir well and let the mixture sit for 15-20 minutes to draw out juices.
- Place the pot over medium-high heat and bring to a boil, stirring frequently. Reduce heat to medium-low, add thyme sprigs, and simmer gently for 20-25 minutes, stirring every 5 minutes and skimming off foam.
- Stir in the aged balsamic vinegar and cook for another 5 minutes until the jam darkens and becomes glossy.
- Test for doneness by dipping a cold spoon from the freezer into the jam. If it coats the spoon without running off immediately, it is done. Alternatively, check that the temperature reaches 220°F (104°C).
- Remove from heat, discard thyme sprigs, and let cool for 5 minutes. Ladle into clean, warm jars, wipe rims, and seal.
- For long-term storage, process jars in a boiling water bath for 10 minutes. For short-term storage, let cool completely and refrigerate.
Notes
The secret to perfect texture is the cold spoon test. Ensure you use aged balsamic vinegar for depth, not cheap salad dressing. Skim foam for a glossy finish. The jam will thicken further as it cools. If using dried figs, rehydrate them first. This jam is versatile and can be used on toast, cheese boards, or as a glaze for meats.
