  • 2 tablespoons refined coconut oil
  • Flaky sea salt (optional)
  • ½ cup (120g) creamy peanut butter
  • 1 cup (80g) crushed crispy wafers or cornflakes
  • 1.5 cups (350g) vanilla ice cream

Instructions

  1. Line a sheet pan with parchment paper and let the ice cream soften on the counter for about 10 minutes until scoopable but firm.
  2. In a small bowl, mix the creamy peanut butter and crushed wafers until the crumbs are evenly coated and the mixture resembles wet sand.
  3. Portion the ice cream into 2-inch diameter mounds on the parchment-lined pan, spacing them out, and freeze for at least 30 minutes until firm.
  4. Press a teaspoon of the peanut butter mixture onto the top of each frozen ice cream mound and freeze again for 15-20 minutes to set.
  5. Melt the chocolate chips in the microwave in 30-second intervals, stirring until smooth, then stir in the coconut oil until the mixture is thin and glossy.
  6. Dip each frozen ice cream mound into the melted chocolate using two forks to coat completely, letting excess drip off before placing back on the parchment paper.
  7. Immediately sprinkle with flaky sea salt if desired, then freeze the entire tray for at least 1 hour until the chocolate shell is completely hard.
  8. Store in an airtight container in the freezer, separated by parchment paper, for up to two weeks.

Notes

Use refined coconut oil to avoid coconut flavor. Ensure ice cream is frozen solid before dipping to prevent the chocolate from melting into it. Work quickly when dipping as chocolate thickens as it cools. Do not store in the refrigerator as they will become soft and sticky.
