  • 1 tablespoon Chia Seeds
  • 3/4 cup Milk of Choice (e.g., unsweetened almond milk)
  • 1/4 cup Greek Yogurt (plain, non-fat or 2%)
  • 1 scoop Vanilla Protein Powder
  • 2 tablespoons Creamy Peanut Butter
  • 1 teaspoon Maple Syrup (optional)
  • 1/2 teaspoon Cinnamon
  • 1 pinch Salt
  • Optional Toppings: Sliced Bananas, Granola, Dark Chocolate Chips, Extra Peanut Butter

Instructions

  1. Add rolled oats, chia seeds, cinnamon, salt, and protein powder to a mason jar. Shake gently to distribute.
  2. Microwave peanut butter for 10 seconds to soften, then stir into the milk and yogurt before pouring into the jar.
  3. Add the milk mixture to the jar. Seal the lid tightly and shake vigorously until the mixture is smooth and consistent.
  4. Refrigerate for at least 4 hours, preferably overnight, to allow oats to soften and chia seeds to gel.
  5. Before eating, stir the oats. Add toppings such as bananas, granola, or chocolate chips.
  6. Serve cold or microwave for 60-90 seconds if preferred warm, adding a splash of milk if too thick.

Notes

Do not use instant or steel-cut oats as they will not soften properly overnight. Softening the peanut butter before mixing prevents clumps. The recipe can be made vegan by using plant-based milk, yogurt, and protein powder. Store in the refrigerator for up to 5 days.
