Description
A creamy, high-protein breakfast made with rolled oats, chia seeds, Greek yogurt, and peanut butter. This easy meal prep recipe requires no cooking and keeps you full for hours.
Ingredients
Scale
- 1/2 cup Old-Fashioned Rolled Oats
- 1 tablespoon Chia Seeds
- 3/4 cup Milk of Choice (e.g., unsweetened almond milk)
- 1/4 cup Greek Yogurt (plain, non-fat or 2%)
- 1 scoop Vanilla Protein Powder
- 2 tablespoons Creamy Peanut Butter
- 1 teaspoon Maple Syrup (optional)
- 1/2 teaspoon Cinnamon
- 1 pinch Salt
- Optional Toppings: Sliced Bananas, Granola, Dark Chocolate Chips, Extra Peanut Butter
Instructions
- Add rolled oats, chia seeds, cinnamon, salt, and protein powder to a mason jar. Shake gently to distribute.
- Microwave peanut butter for 10 seconds to soften, then stir into the milk and yogurt before pouring into the jar.
- Add the milk mixture to the jar. Seal the lid tightly and shake vigorously until the mixture is smooth and consistent.
- Refrigerate for at least 4 hours, preferably overnight, to allow oats to soften and chia seeds to gel.
- Before eating, stir the oats. Add toppings such as bananas, granola, or chocolate chips.
- Serve cold or microwave for 60-90 seconds if preferred warm, adding a splash of milk if too thick.
Notes
Do not use instant or steel-cut oats as they will not soften properly overnight. Softening the peanut butter before mixing prevents clumps. The recipe can be made vegan by using plant-based milk, yogurt, and protein powder. Store in the refrigerator for up to 5 days.
