A rich, creamy, and spicy Italian sausage soup made with fresh kale and red potatoes. This naturally gluten-free and dairy-free version delivers restaurant-quality comfort without heavy cream.

- 1 pound Italian sausage (mix of spicy and mild)
- 1 large yellow onion, diced
- 4–5 cloves garlic, minced
- 4 cups chicken broth (low-sodium)
- 1/2 cup dry white wine (optional)
- 1.5 pounds red potatoes, cut into 1/2-inch cubes
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 4–5 cups fresh kale, chopped (stems removed)
- Salt and black pepper to taste
- 1 tablespoon olive oil (if needed for sautéing)
Instructions
- Heat a large Dutch oven over medium-high heat. Add the Italian sausage and break it up with a wooden spoon. Brown and crumble the sausage for 5-7 minutes. Drain excess fat, leaving about 1 tablespoon in the pot.
- Reduce heat to medium. Add the diced onion to the pot and cook until soft and translucent, about 3 minutes. Add the minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
- Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Simmer for 1-2 minutes to cook off the alcohol.
- Add the chicken broth, cubed potatoes, oregano, salt, and pepper. Stir well and bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are tender.
- Stir in the chopped kale and simmer for another 2-3 minutes until the kale is wilted and tender-crisp.
- Taste and adjust seasoning with salt, pepper, or a splash of lemon juice if desired.
- Ladle into bowls and serve immediately, garnished with fresh parsley or olive oil.
Notes
For extra creaminess without dairy, blend a cup of the soup (potatoes and broth) and stir it back in. If freezing, consider adding potatoes when reheating to prevent mushiness. You can substitute turkey sausage for a leaner option or mushrooms for a vegetarian version.
