- 1 cup all-purpose flour

- ½ teaspoon salt
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- ¼ cup whole milk
- Vanilla ice cream, for serving
Instructions
- Preheat grill to medium-high heat (375-400°F).
- In a bowl, toss peach halves with brown sugar, cinnamon, lemon juice, and vanilla extract. Let sit for a few minutes.
- In a medium bowl, whisk together flour, baking powder, salt, and granulated sugar.
- In a separate small bowl, mix melted butter and milk.
- Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
- Place a large piece of heavy-duty aluminum foil on a surface and spray with cooking spray or brush with butter.
- Place sugared peach halves cut-side up on the foil.
- Spoon the topping mixture over the peaches, dolloping it on top rather than covering completely.
- Place foil packets directly on the grill grates and close the lid.
- Grill for 15-20 minutes without opening the lid, until topping is golden brown and puffed, and peaches are tender and bubbling.
- Remove from grill and let cool for 5 minutes.
- Serve warm with vanilla ice cream.
Notes
Use ripe but firm peaches to prevent mushiness. Do not open the grill lid too early to ensure proper cooking. For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter and almond/oat milk. Fresh peaches are preferred over frozen for better texture.
