Description
A decadent, make-ahead weekend brunch dish that combines the flavors of cinnamon rolls with the comfort of French toast bake. It features a custardy bread base, cinnamon sugar filling, and a tangy cream cheese glaze.
Ingredients
- 2 large loaves French bread or Brioche (about 24–30 slices, day-old preferred)
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 tablespoons ground cinnamon
- 6 large eggs, room temperature
- 2 cups (480ml) heavy cream
- 1 cup (240ml) whole milk
- 1 tablespoon pure vanilla extract
- 2 tablespoons maple syrup
- 4 oz (115g) cream cheese, softened
- 1 cup (120g) powdered sugar
- 2–3 tablespoons milk (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Slice bread into 1-inch thick pieces (if fresh) or break day-old bread into chunks. Arrange in a single layer at the bottom of the dish.
- In a small bowl, mix melted butter, granulated sugar, and cinnamon until wet and sandy. Pour over bread and press gently to coat.
- In a large bowl, whisk eggs, heavy cream, milk, vanilla extract, and maple syrup until homogenous.
- Pour custard evenly over the bread. Press down gently to ensure bread is submerged. Let sit for 15-20 minutes to absorb (or refrigerate overnight).
- Bake for 45-50 minutes until golden brown and the center is set but has a slight jiggle.
- While baking, beat cream cheese until smooth. Add powdered sugar and milk, whisking until a drizzle consistency is reached.
- Let the bake rest for 10 minutes after removing from oven. Drizzle generously with cream cheese glaze and serve warm.
Notes
Day-old bread is essential to prevent sogginess. If using fresh bread, toast slices lightly before assembling. The dish can be assembled the night before and refrigerated for up to 12 hours. For gluten-free, use GF brioche-style bread. For dairy-free, swap butter for coconut oil, milk for oat milk, and cream cheese for coconut cream.
