  • 4 medium sweet potatoes (about 23 lbs)
  • 2 tablespoons coconut oil or butter
  • 1 teaspoon salt
  • 2 cups shredded rotisserie chicken
  • ½ cup Frank’s RedHot Original hot sauce
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 2 tablespoons ranch dressing
  • 1 cup shredded sharp cheddar cheese
  • 34 stalks green onions, sliced
  • Handful of celery leaves (optional)

Instructions

  1. Wash and scrub sweet potatoes. Prick each potato 5-6 times with a fork to prevent bursting.
  2. Rub potatoes with coconut oil or butter and sprinkle with salt.
  3. Place potatoes on a microwave-safe plate and microwave on high for 8-10 minutes, flipping halfway through, until soft. Let rest for 2 minutes.
  4. In a large bowl, combine shredded chicken, hot sauce, softened cream cheese, minced garlic, and ranch dressing. Stir until well combined.
  5. Optional: Warm the chicken mixture in a small skillet over low heat for 2 minutes to help the cream cheese melt.
  6. Slice cooked sweet potatoes lengthwise, leaving a hinge at the bottom. Fluff the inside with a fork.
  7. Spoon the buffalo chicken mixture generously into each potato.
  8. Top with shredded cheddar cheese.
  9. Microwave for 30-60 seconds or broil for 2-3 minutes until cheese is melted and bubbly.
  10. Garnish with sliced green onions and celery leaves. Serve immediately.

Notes

Ensure cream cheese is softened for best mixing. Do not skip pricking the potatoes to avoid explosions. For a dairy-free version, use vegan cream cheese, butter, and cheddar. Adjust hot sauce quantity based on spice preference.
