Description
A quick, 15-minute gluten-free dinner featuring microwaved sweet potatoes stuffed with a creamy, spicy buffalo chicken mixture made from rotisserie chicken, hot sauce, and cream cheese.

- 4 medium sweet potatoes (about 2–3 lbs)
- 2 tablespoons coconut oil or butter
- 1 teaspoon salt
- 2 cups shredded rotisserie chicken
- ½ cup Frank’s RedHot Original hot sauce
- 4 oz cream cheese, softened
- 2 cloves garlic, minced
- 2 tablespoons ranch dressing
- 1 cup shredded sharp cheddar cheese
- 3–4 stalks green onions, sliced
- Handful of celery leaves (optional)
Instructions
- Wash and scrub sweet potatoes. Prick each potato 5-6 times with a fork to prevent bursting.
- Rub potatoes with coconut oil or butter and sprinkle with salt.
- Place potatoes on a microwave-safe plate and microwave on high for 8-10 minutes, flipping halfway through, until soft. Let rest for 2 minutes.
- In a large bowl, combine shredded chicken, hot sauce, softened cream cheese, minced garlic, and ranch dressing. Stir until well combined.
- Optional: Warm the chicken mixture in a small skillet over low heat for 2 minutes to help the cream cheese melt.
- Slice cooked sweet potatoes lengthwise, leaving a hinge at the bottom. Fluff the inside with a fork.
- Spoon the buffalo chicken mixture generously into each potato.
- Top with shredded cheddar cheese.
- Microwave for 30-60 seconds or broil for 2-3 minutes until cheese is melted and bubbly.
- Garnish with sliced green onions and celery leaves. Serve immediately.
Notes
Ensure cream cheese is softened for best mixing. Do not skip pricking the potatoes to avoid explosions. For a dairy-free version, use vegan cream cheese, butter, and cheddar. Adjust hot sauce quantity based on spice preference.
