- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 2 tablespoons neutral oil (vegetable or canola)
- 1 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.5 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 3 tablespoons unsalted butter
- 4–5 cloves fresh garlic, minced
- 1 pint cherry tomatoes (about 2 cups)
- 1 tablespoon olive oil
- Pinch of salt and pepper for tomatoes
- 2 tablespoons fresh parsley, chopped
- Optional: 0.25 cup white wine
- Optional: Lemon juice
Instructions
- Pat the steak cubes completely dry with paper towels and toss them in a bowl with the neutral oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
- Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper on a baking sheet and roast for 10-12 minutes until blistered and soft. Set aside.
- Heat a large skillet over medium-high heat with neutral oil until shimmering. Sear the steak cubes in batches (do not crowd the pan) for 2 minutes per side until browned but still pink inside. Remove to a plate.
- Reduce heat to medium-low. Add butter to the same pan and melt. Add minced garlic and stir constantly for 1 minute until fragrant and golden.
- If using wine, add it now and simmer for 30 seconds to deglaze the pan.
- Return the steak and blistered tomatoes to the pan. Toss gently to coat everything in the garlic butter sauce.
- Taste and adjust seasoning if needed. Sprinkle with fresh parsley and serve immediately.
Notes
Ensure steak is patted dry before seasoning to achieve a good sear. Cook steak in batches to avoid steaming. Watch garlic closely as it burns easily. For dairy-free, swap butter for olive oil. For a spicy kick, add red pepper flakes to the garlic butter.
