Ingredients

  • 2 tablespoons neutral oil (vegetable or canola)
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 45 cloves fresh garlic, minced
  • 1 pint cherry tomatoes (about 2 cups)
  • 1 tablespoon olive oil
  • Pinch of salt and pepper for tomatoes
  • 2 tablespoons fresh parsley, chopped
  • Optional: 0.25 cup white wine
  • Optional: Lemon juice

Instructions

  1. Pat the steak cubes completely dry with paper towels and toss them in a bowl with the neutral oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  2. Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper on a baking sheet and roast for 10-12 minutes until blistered and soft. Set aside.
  3. Heat a large skillet over medium-high heat with neutral oil until shimmering. Sear the steak cubes in batches (do not crowd the pan) for 2 minutes per side until browned but still pink inside. Remove to a plate.
  4. Reduce heat to medium-low. Add butter to the same pan and melt. Add minced garlic and stir constantly for 1 minute until fragrant and golden.
  5. If using wine, add it now and simmer for 30 seconds to deglaze the pan.
  6. Return the steak and blistered tomatoes to the pan. Toss gently to coat everything in the garlic butter sauce.
  7. Taste and adjust seasoning if needed. Sprinkle with fresh parsley and serve immediately.

Notes

Ensure steak is patted dry before seasoning to achieve a good sear. Cook steak in batches to avoid steaming. Watch garlic closely as it burns easily. For dairy-free, swap butter for olive oil. For a spicy kick, add red pepper flakes to the garlic butter.
