These fudgy brownie bars feature a dense, chewy chocolate base topped with a silky, melted chocolate ganache. It’s a foolproof, one-bowl dessert that delivers maximum flavor with minimal effort.

- 1 cup unsalted butter
- 2 cups semi-sweet chocolate chips
- 1 ½ cups granulated sugar
- 1 cup dark brown sugar, packed
- 4 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- ½ teaspoon salt
- ½ cup heavy cream
- 1 ½ cups semi-sweet chocolate chips (for ganache)
- 1 tablespoon butter (for ganache)
- Pinch of salt (for ganache)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper.
- In a medium saucepan over low heat, melt 1 cup butter and 2 cups chocolate chips together, stirring frequently until smooth. Set aside to cool slightly.
- In a large mixing bowl, whisk together granulated sugar and brown sugar. Add eggs one at a time, whisking well after each addition. Whisk in vanilla extract.
- Pour the melted chocolate-butter mixture into the sugar-egg mixture and stir gently until just combined.
- Sift flour, cocoa powder, and salt over the wet mixture. Gently fold in with a spatula until no streaks of flour remain.
- Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let brownies cool completely in the pan on a wire rack.
- While brownies cool, heat heavy cream in a small saucepan until it just begins to simmer. Pour hot cream over 1 ½ cups chocolate chips in a heatproof bowl and let sit for 5 minutes.
- Stir ganache from the center outwards until smooth. Stir in 1 tablespoon butter and a pinch of salt.
- Pour warm ganache over completely cooled brownies and spread evenly. Cut into squares and serve.
Notes
Do not overbake; brownies continue to cook in the hot pan. Cool completely before adding ganache to prevent melting. Use good quality chocolate for best flavor. Room temperature eggs help prevent the chocolate from seizing.
