Ingredients

  • 1 cup (240ml) coconut cream
  • 1/2 cup (120ml) white rum (optional)
  • 2 tablespoons (30ml) fresh lime juice
  • 2 tablespoons (30ml) simple syrup
  • 1 cup (120g) ice cubes
  • 1/2 teaspoon (2.5ml) vanilla extract (optional)
  • Optional garnishes: pineapple wedges, maraschino cherries, fresh mint leaves

Instructions

  1. Prepare your ingredients: measure frozen pineapple chunks and coconut cream, freshly squeeze lime juice, and prepare simple syrup if making from scratch.
  2. Place frozen pineapple, coconut cream, white rum (if using), lime juice, simple syrup, vanilla extract, and ice cubes into a blender. Secure the lid.
  3. Blend starting on low speed, gradually increasing to high, until smooth and creamy, about 1-2 minutes.
  4. Taste and adjust sweetness or tartness by adding more simple syrup or lime juice. If too thick, add a splash of pineapple juice or water and blend briefly.
  5. Pour into a glass and garnish with pineapple wedge, maraschino cherry, or fresh mint. Serve immediately.
