Description

A refreshing, alcohol-free summer mocktail made with fresh mint, lime, honey, and soda water. It’s simple to prepare, budget-friendly, and perfect for parties or lazy days.


Ingredients

  • 2 cups fresh mint leaves (about 3040 sprigs)
  • 6 medium fresh limes
  • 45 cups chilled soda water
  • ½ cup honey or agave syrup
  • ½ teaspoon sea salt
  • Ice cubes
  • Lime wheels for garnish
  • Mint sprigs for garnish

Instructions

  1. Wash and pat dry the mint leaves, then roughly chop or tear them to release essential oils.
  2. In a large pitcher, combine the chopped mint, juice of 3 limes (or half the lime wedges), and a pinch of sea salt.
  3. Gently muddle the mint and lime mixture to bruise the leaves and release flavor without making it bitter.
  4. Add the honey or agave syrup and stir to combine. Let the mixture sit for 5 minutes to infuse.
  5. Add the remaining lime juice (or wedges) and stir again. Taste and adjust sweetness or tartness if needed.
  6. Fill the pitcher with ice cubes.
  7. Pour in the chilled soda water, starting with 4 cups, and stir gently to combine.
  8. Garnish each glass with a lime wheel and a mint sprig that has been slapped between the palms to release aroma.
  9. Serve immediately while cold and fizzy.

Notes

Do not over-muddle the mint as it can make the drink bitter. Ensure all ingredients are chilled before mixing. The base (mint, lime, honey) can be made up to 2 days in advance and stored in the fridge; add soda water just before serving to maintain carbonation. For a vegan version, substitute honey with agave syrup.
