  • 1224 soft dinner rolls (halved horizontally)
  • 16 oz low-moisture part-skim mozzarella cheese, shredded
  • 8 oz provolone cheese, sliced
  • 1 cup thick pizza sauce
  • 1 package sliced pepperoni
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice dinner rolls horizontally. If using individual rolls, slice each in half. Place bottom halves in a 9×13 inch baking dish.
  3. In a small saucepan over low heat, melt butter. Add minced garlic, dried parsley, garlic powder, and red pepper flakes. Stir for 30 seconds until fragrant but not browned. Remove from heat.
  4. Brush the bottom halves of the rolls generously with half of the garlic butter mixture.
  5. Layer a light amount of mozzarella cheese on the bottoms, followed by 1-2 teaspoons of pizza sauce per roll. Add pepperoni, then top with provolone and remaining mozzarella.
  6. Place top halves of rolls on the cheese. Brush tops with remaining garlic butter and sprinkle with Parmesan cheese.
  7. Bake for 15-20 minutes until cheese is melted and tops are golden brown. Cover with foil for the first 10 minutes if tops are browning too quickly.
  8. Let rest for 5 minutes before serving to allow cheese to set.

Notes

Use soft dinner rolls; avoid dense crusty bread. Shred your own cheese for better melting. Ensure pizza sauce is thick to prevent soggy bottoms. Let sliders rest for 5 minutes after baking to prevent them from falling apart when pulled.
