  • 812 strips thick-cut bacon (23 strips per sandwich)
  • 4 slices cheddar cheese (or 4 ounces shredded)
  • Optional: Hash browns, hot sauce, avocado, or ham

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lay bacon strips in a single layer on the baking sheet. Bake for 10-12 minutes, flipping halfway, until golden and crisp. Remove and drain on paper towels.
  3. While bacon cooks, split English muffins and spread butter on the cut sides. Toast in a toaster or toaster oven until golden brown. Set aside.
  4. In a bowl, whisk eggs with heavy cream/milk, salt, and pepper until frothy.
  5. Heat a non-stick skillet over medium-low heat with a knob of butter. Pour in egg mixture.
  6. Let eggs sit for 10 seconds, then gently push edges to center with a spatula, allowing uncooked egg to flow to edges. Cook until mostly set but still slightly runny (2-3 minutes).
  7. Assemble sandwich: Place cheese on bottom muffin half, add eggs, top with bacon, and close with top muffin half.
  8. Serve immediately.

Notes

Do not overcook the eggs; they should look slightly wet when removed from heat as they will continue to cook from residual heat. Buttering the muffins creates a moisture barrier to prevent sogginess. For meal prep, cook bacon and toast muffins the night before, storing in airtight containers.
