- 2 pounds boneless, skinless chicken thighs
- 1.5 pounds Brussels sprouts, trimmed and halved
- 2 medium apples (Honeycrisp, Fuji, or Pink Lady), cored and cut into 1-inch chunks
- 1 medium red onion, chopped
- 3 tablespoons real maple syrup
- 2 tablespoons extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme (or 2 teaspoons fresh)
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 0.5 teaspoon freshly cracked black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with parchment paper or aluminum foil.
- In a small bowl or jar, whisk together the olive oil, maple syrup, Dijon mustard, dried thyme, garlic powder, salt, and pepper to create the glaze.
- Pat the chicken thighs dry with paper towels. Place chicken, Brussels sprouts, apples, and onions in a large mixing bowl.
- Pour the glaze over the ingredients and toss well until everything is evenly coated.
- Arrange the ingredients on the prepared sheet pan in a single layer, placing chicken in the center and surrounding with veggies and apples. Ensure there is space between items to prevent steaming.
- Roast for 20 minutes. Remove pan and flip the chicken thighs.
- Return to oven and roast for another 5-10 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and sprouts are crispy-tender.
- Remove from oven and let rest for 5 minutes before serving.
Notes
Do not crowd the pan; use two pans if necessary to ensure crispy edges. Pat chicken dry before tossing for better browning. Use real maple syrup, not pancake syrup. If adding nuts like pecans or walnuts, toss them in during the last 5 minutes of cooking to prevent burning. Chicken breasts can be used but reduce cook time by 5 minutes.
