  • 2 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1 sheet refrigerated pie dough (about 250g)
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • 1 tablespoon turbinado or sand sugar (for sprinkling)
  • Optional: 2 oz cream cheese, cubed
  • Optional: 2 tablespoons chopped walnuts or pecans
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Line a standard baking sheet with parchment paper.
  2. Unroll the pie dough and roll it out to about 1/8 inch thickness. If it gets too soft, chill for 10 minutes.
  3. Cut the dough into 4×4 inch squares (yields about 8-10 squares).
  4. In a small bowl, combine halved grapes, sugar, lemon juice, cornstarch, and cinnamon. Toss gently to coat the grapes.
  5. Place one dough square on the prepared baking sheet. Spoon 2-3 tablespoons of the grape mixture into the center, leaving a 1-inch border.
  6. Create a lattice by either making 3-4 diagonal slashes across the top for a rustic look, or weaving thin strips of leftover dough in a cross-hatch pattern.
  7. Press edges down with a fork if using the slash method. Brush tops generously with egg wash and sprinkle with turbinado sugar.
  8. Bake for 15-18 minutes until the crust is deep golden brown and filling is bubbling. Cover edges with foil if browning too quickly.
  9. Cool on the baking sheet for 5 minutes before serving warm.

Notes

Keep dough cold to prevent sticking. Do not overfill to avoid leaking. Cornstarch is essential to thicken the grape juices. Can be frozen raw or baked for later use.
