An effortless yet impressive fall-themed charcuterie board featuring homemade spiced candied pecans, raw honeycomb, sharp cheeses, and seasonal fruits. Perfect for entertaining with minimal active prep time.
Ingredients
- 2 cups (200g) raw unsalted pecans or walnuts
- ½ cup (100g) dark brown sugar
- 2 tablespoons (30g) unsalted butter
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- Pinch of cayenne pepper
- Sea salt flakes (for finishing)
- 8 ounces (225g) sharp cheddar or aged Gouda
- 8 ounces (225g) cream cheese or Brie
- 1 small piece (4–6 ounces) raw honeycomb
- 1 cup (150g) fresh or dried figs
- 1 cup (150g) red or green grapes
- 1 package (approx. 200g) crackers or bread (e.g., rosemary crackers, baguette slices)
- Optional: Apple slices, pumpkin seeds, whole-grain mustard, or fig jam
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large skillet over medium heat, melt the butter. Add brown sugar, cinnamon, nutmeg, and cayenne. Stir constantly for 2 minutes until the sugar melts and forms a fragrant syrup.
- Remove skillet from heat. Toss in the pecans, stirring vigorously to coat every nut in the sugar mixture.
- Pour coated nuts onto the prepared baking sheet, spreading them into a single layer. Break apart any clumps while warm.
- Roast in the oven for 10-12 minutes, watching closely to prevent burning. Nuts should be golden and fragrant.
- Remove from oven and immediately sprinkle with flaky sea salt. Let cool completely on the pan until hardened, then break into clusters.
- While nuts cool, prep the cheese and fruit. Slice cheddar and Gouda into cubes or slices. Slice fresh figs in half and wash/dry grapes.
- Take cheese out of the fridge 30 minutes before serving to allow it to come to room temperature for better flavor.
- Assemble the board by placing large anchor items first (Brie wheel, cheddar block, honeycomb, jam bowls).
- Add medium items like crackers, apple slices, and piles of candied nuts near complementary cheeses.
- Fill gaps with small items like grapes and individual crackers to create visual interest and height.
- Serve with tongs or small forks for hygiene and elegance.
