Ingredients

  • 1 medium apple (about 150g), thinly sliced (Honeycrisp, Fuji, or Granny Smith)
  • 4 ounces (115g) sharp cheddar cheese, sliced or shredded
  • 4 slices sturdy bread (sourdough or country white)
  • 3 tablespoons (45g) unsalted butter, softened
  • 2 tablespoons (30ml) hot honey (or regular honey mixed with red pepper flakes)

Instructions

  1. Wash and thinly slice the apple about 1/8 inch thick.
  2. Shred or slice the sharp cheddar cheese and set aside.
  3. Spread softened butter evenly on one side of each slice of bread.
  4. Place two slices of bread butter-side down on a clean surface.
  5. Layer half of the cheddar cheese on each slice, then add apple slices.
  6. Drizzle 1 tablespoon of hot honey over the apples on each sandwich.
  7. Top with remaining cheese and the other bread slice, butter-side up.
  8. Heat a non-stick skillet or cast iron pan over medium-low heat.
  9. Cook one sandwich for about 4 minutes until golden brown and cheese starts to melt.
  10. Flip carefully and cook the other side for 3-4 minutes until golden and cheese is melted.
  11. Repeat with the second sandwich.
  12. Transfer sandwiches to plates and drizzle with remaining hot honey.
  13. Serve immediately while warm and gooey.

Notes

Use room temperature butter for easier spreading and even cooking. Cook over medium-low heat to avoid burning the bread and ensure cheese melts fully. Thin apple slices soften slightly but retain crunch. Adjust hot honey to taste or substitute with regular honey mixed with red pepper flakes. Leftover sandwiches reheat well in a skillet with a lid, avoid microwaving to prevent soggy bread.
