Ingredients

  • 6 large everything bagels, torn into bite-sized pieces
  • 8 ounces smoked salmon, chopped into bite-sized pieces
  • 8 ounces cream cheese, softened
  • 8 large eggs
  • 1.5 cups heavy cream
  • 1 cup whole milk
  • 1.5 cups shredded low-moisture mozzarella cheese
  • 2 tablespoons everything bagel seasoning
  • 2 tablespoons fresh chives, chopped
  • 1 teaspoon freshly cracked black pepper
  • Pinch of salt (to taste)

Instructions

  1. Tear bagels into 1-2 inch pieces and place them in a greased 9×13 inch baking dish.
  2. Scatter chopped smoked salmon over the bagels.
  3. Dot the dish with small dollops of softened cream cheese, distributing evenly.
  4. In a large bowl, whisk eggs until beaten. Add heavy cream, whole milk, black pepper, and a pinch of salt. Whisk until smooth.
  5. Pour the egg mixture over the bagels. Press down gently to ensure bagels are submerged.
  6. Refrigerate for at least 30 minutes or ideally overnight to allow bread to absorb the custard.
  7. Preheat oven to 350°F (175°C).
  8. Remove dish from fridge. Sprinkle shredded mozzarella cheese evenly over the top.
  9. Generously sprinkle everything bagel seasoning over the cheese.
  10. Bake for 30-35 minutes until the top is golden brown, cheese is bubbly, and a knife inserted in the center comes out clean.
  11. Let rest for 10 minutes before cutting to allow custard to set.
  12. Garnish with fresh chopped chives and serve warm.

Notes

Use day-old or toasted bagels to prevent sogginess. Do not skip the resting time in the fridge to ensure proper texture. Control salt carefully as salmon and seasoning are salty. Can be frozen assembled for up to 3 months; thaw overnight before baking.
