Description

A savory, high-protein breakfast strata made with sourdough bread, cream cheese, cheddar, and everything bagel seasoning. It is a meal-prep friendly dish that keeps you full until lunch.

  • 8 cups sourdough bread, cubed (about 400g)
  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 8 oz cream cheese, softened and cut into small cubes
  • 1.5 cups sharp cheddar cheese, shredded
  • 3 tablespoons everything bagel seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Optional: cooked bacon bits, sautéed spinach, ham, or smoked salmon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut sourdough loaf into 1-inch cubes. If fresh, spread on a baking sheet and let sit for 30-60 minutes to dry out slightly.
  3. In a large mixing bowl, whisk together eggs, heavy cream, milk, salt, and black pepper until smooth and frothy.
  4. Grease a 9×13 inch baking dish.
  5. Spread half of the bread cubes in the bottom of the dish. Sprinkle half of the cream cheese cubes and half of the cheddar cheese over the bread.
  6. Repeat with the remaining bread, cream cheese, and cheddar cheese.
  7. Sprinkle everything bagel seasoning evenly over the top.
  8. Pour the egg mixture evenly over the bread, ensuring it gets into all nooks and crannies. Press down gently with a spatula.
  9. Let the strata sit at room temperature for 15-20 minutes to allow the bread to absorb the custard.
  10. Bake for 45-50 minutes, or until the top is golden brown, puffed, and a knife inserted in the center comes out clean. Cover loosely with foil if browning too quickly.
  11. Let the strata rest for 10 minutes before cutting into squares and serving warm.

Notes

Use day-old bread for best texture to prevent sogginess. Ensure cream cheese is softened to room temperature for even melting. Do not overbake as the strata continues to cook slightly after removal from the oven. Can be frozen unbaked for up to 3 months.
